A warm, golden detox soup with carrots, potatoes, turmeric, and ginger — rich in anti-inflammatory ingredients and perfect for gentle nourishment.
Ingredients

1 tbsp olive oil or coconut oil

1 onion, diced

2 celery stalks, chopped

3 carrots, chopped

2 medium potatoes or sweet potatoes, cubed

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tsp ground turmeric

6 cups vegetable broth

Juice of ½ lemon

Salt and black pepper to taste

¼ cup fresh parsley or cilantro, chopped
Instructions

Heat oil in a soup pot over medium heat. Sauté onion and celery for 5–7 minutes.

Add garlic, ginger, and turmeric. Cook 1 minute.

Stir in carrots and potatoes. Pour in broth. Simmer 20–25 minutes until tender.

Blend partially or fully for desired texture.

Stir in lemon juice, herbs, salt, and pepper. Serve warm.
